I’m 8 weeks into a cut and the last 3 days have felt horrible I felt great everyday before than but for the last 3 days in particular it’s felt pretty bad, any way to refresh myself I would have liked to cut for around 16 weeks.

You could go back to maintenance or a little below for a few day or even a week or so if you feel you need it.
I personally wouldnt go into a surplus here

do you think like a maitmence day or two high in carbs and fats would help or should I keep protein a priority?

Not sure how your diet is structured now but if carbs are low, then yes i would raise them with maybe a small raise in fats (depending on how high your fats are on your diet).
I think that cheat shit food days just leave me feeling bloated and inflamed

16 weeks straight isn't sustainable for most people.

Sounds like it's time to reverse diet and give your body some normalcy.

Yea the longest cut I’ve done is about 10 weeks since I’ve lost a significant amount of weight initially and I was pretty drained after the 10 weeks.

Hard to give any advice without some specifics.
Maybe you're just getting to the hard part of the diet. It's not supposed to be easy.
What do you mean you feel like horrible? Are you nauseous? Just hungry? Weak? Etc..
How is your diet laid out? How many meals a day? Are you feeling bad all day or just at certain times?
How much cardio are you doing?
Alot of factors can play into your situation.
