Got any recipies?
I bought some the other day and have no idea what to do with it.
Here's what I do.
Slice it up thin. I cut anything off that doesn't look like pure liver.. I can't really describe it, but weird chunks, connective tissue type stuff.
Soak it in butter milk or plain milk over night.
Take it out and rinse it.
I put about 1 cup of flour, a good amount of salt, pepper, garlic power and onion powder in a bowl and mix it.
Drag liver chunks in the flour mix.
Drop on cast iron with a good oil (avacod, beef tallow etc) at med heat
I flip each slice when its brown and crispy
In another cast iron, I do fried onions.. Slice onion up and fry in good oil until it's clear.. we like it a bit burnt. I usually drop some butter in the onions when they are almost done frying to give them the buttery taste
Put lots of finished onion on the finished liver when you eat it.
The butter milk sucks out blood and strong flavour.. don't skip that step... Onions, wether you like them or not, make the liver much better.. I hate onions, but love them fried with liver.
We like the liver well done, lots of people do not like it well done.. so try it at various doneness..
